Ingredients

  • 4 large avocados

  • 1 teaspoon sea salt (or to taste)

  • 1/4 cup raw apple cider vinegar

  • 4 large free-range chicken or duck eggs

  • 1 tablespoon ghee (for cooking)

  • Freshly ground black pepper (to taste)

  • Fresh herbs (such as cilantro or parsley) for garnish

  • Optional: Crumbled feta cheese (for serving)

Instructions

  1. Prepare the Avocados:

    • Halve the avocados and discard the seeds. Scoop out a small amount of avocado from the center to make room for the poached egg. Carefully peel off the skin and set aside.

  2. Poach the Eggs:

    • Fill a saucepan with 3 to 4 inches of water. Add 1/2 teaspoon of sea salt and the apple cider vinegar, then bring to a boil.

    • Poach the eggs for about 5 minutes, or until the whites are set but the yolks remain runny.

  3. Fill the Avocado:

    • Carefully place one poached egg into each avocado half. Season with additional salt and freshly ground black pepper to taste.

  4. Sear the Avocado:

    • In a skillet, heat the ghee over medium-high heat. Place the avocado halves, egg side up, into the skillet and lightly sear the bottom for a minute or two until golden.

    • Alternatively, you can place the filled avocados under a broiler for a few minutes to warm them through while keeping the eggs intact.

  5. Serve:

    • Garnish with fresh herbs and serve immediately. Optionally, add crumbled feta cheese on top for extra flavor.
