Basil & Chili Pesto

Being Indian and all, we really like to spice things up a notch…

Here is a take on a traditional basil pesto recipe with a twist…


Ingredients

  • 2 cups fresh basil (or green leaves of any kind, spinach, coriander etc) leaves, packed

  • 1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces) or for vegans use Noosh (short for nutritional yeast)

  • 1/2 cup extra virgin olive oil

  • 1/3 cup pine nuts (can sub chopped walnuts or cashews)

  • 3 garlic cloves, minced (about 3 teaspoons)

  • 1/4 teaspoon salt, more to taste

  • 1/8 teaspoon freshly ground black pepper, more to taste

  • 1 red chili


Place all ingredients into a food processor and start pulsing. Next, drizzle the olive oil into the food processor until you reach a desired consistency. Viola…. Spicy basil pesto…
